Make this salad!!
I whipped up this little gem tonight and decided it was like an updated, more nutritious version of a Cobb salad.

Kale, lightly sautéed in evoo to tender
Spinach
Spicy sprouts
Cucumbers, julienned
Grape tomatoes, halved
Avocado
Boiled egg, sliced
Shredded chicken (optional)
Stella blue cheese
Kosher salt

You choose on the dressing, personally I think it perfect on its own with the olive oil from the kale. Maybe a squeeze of a lemon. But if it seemed a bit dry I’d try San Pasquale (the BEST), or any kind of light oil and vinegar blend.
